I am looking for some creative methods for handing situations when people literally walk in front of my camera, thus blocking my subject from left to right.
The best idea I've come up with so far is to use cropping to create a sliding panel, then choose another video and place it on top so as to show it in the cropped areas.
I'm fairly certain that this is a common occurrence, especially for those of us who film sports and other events where you can't do another "take".

I suspect your proposed solution, while excellent, will be hard to execute in practice. Since many people have iPhones or iPads, perhaps you could have a friend do a B-roll from another angle and do a cutaway. I'm afraid there's no good solution to people who don't care that you're filming, though.
